Mealworm Fudge


Ingredients

  • Makes 20 pieces
  • 250g Medjool dates
  • 175g crunchy peanut butter
  • 20g coconut oil
  • 45g mealworms
  • 30g raw cacao powder

Method

De-stone the dates and place in a pan with a little boiling water and allow to simmer until date soften and water is absorbed.

Add the soaked dates, along with the peanut butter, coconut oil and cacao powder to a food processor and blitz until you have a smooth mixture.

Transfer the mixture to a mixing bowl and add in the buffalo worms before folding them in, taking care to ensure they are evenly distributed.

Empty the mix into a cake tin lined with greaseproof paper and spread out before putting it in the freezer for a few hours. Due to the nature of the mix it will need to be stored in the freezer and is best served directly from the freezer.
