I am a big fan of making my own truffles and love experimenting with different combinations. Not only are they incredibly easy to make, but they are packed full of goodness and an ideal snack for any occasion.
Place the almonds, dates and apricots into a food processor and blitz until they come together to form one large ball - this may take a few minutes.
Remove the mixture from the food processor and divide into equal portions before rolling into balls between the palms of your hands.
Melt the chocolate in a ban marie before rolling each ball in the melted chocolate, making sure they are evenly coated.
Place on a tray lined with greaseproof paper before putting them in the fridge to set.
As an optional extra you can garnish with chopped almonds and apricot, but be sure to do this before setting the chocolate in the fridge.
