Hot cross buns are one of my absolute weaknesses, toasted with salted butter and a smidgen of jam with a cup of hot tea. I could literally eat dozens of them, which wouldn't be that helpful to my training for a summer of big bike races in Europe. Which is why I came up with this healthy hot cross bun inspired recipe for you all to enjoy over Easter.
Add the dates to a saucepan with 60ml of water and simmer over a gentle heat for a few minutes until the dates start to absorb the water. Mix well with a fork to ensure they are softened.
Place all of the ingredients, apart from the marzipan, in a food processor and blitz until they come together in a ball. This make take a few minutes.
Using your hands mould the mix into equal sized balls by rolling between the palms of your hands. Once the balls are formed flatten slightly.
Roll the marzipan out and cut into thin strips. Decorate each 'bun' to give it that hot cross bun look.
Note: Chocolate mini eggs are completely optional.....but what with it being Easter everyone deserves a few.
