Despite looking more like a weird alien than a vegetable kohlrabi, which belongs to the cabbage family, is a fantastic ingredient to use in salads. It’s peppery taste makes it a great addition to a coleslaw and works really well with horseradish.
Start by preparing the coleslaw ingredients. Peel the kohlrabi and carrots and cut the core out of the apple and cabbage.
Grate the kohlrabi, carrots, apple and cabbage into a large bowl and then prepare the dressing.
Thoroughly mix the dressing ingredients together in a bowl before adding to the coleslaw and stirring until evenly coated.
